For classical music purposes, I would recommend Marc-Antoine Charpentier's "Messe de minuit". Marc Minkowski's 1997 recording on DGG Archiv takes the Midnight Mass and moves it from the early Baroque (1690) to the late Renaissance where it probably belongs.

It's a great piece.
