So whose version of the apocryphal writings is correct? The Catholic, Ethiopian, Coptic and Eastern Churches all have different versions.
Could be -- if an Ethiopian Orthodox wants to call Enoch part of the Bible, it's in HIS Bible as scripture, so, in my opinion, he's fine to quote it to me, and I will read it as all scripture is useful for teaching.

I've only ever read through the first couple of chapters, because on reading them I got a strange sense of deja vu!!
The Holy Great One will come forth from His dwelling,
4. And the eternal God will tread upon the earth, (even) on Mount Sinai,

And appear in the strength of His might from the heaven of heavens.
However, to the point over here -- since there is and was consensus among the Oriental (Coptic, Armenian, Ethiopian), Orthodox, Catholic and Assyrian Churchs prior to the Reformation, on the matter of Maccabees and it is held as scripture by the majority of Christians, that states it as scripture.
you may disagree and you are free to do so, but it is still part of canon.
