Just curious, why do you suppose some people engage in sex with certain people when they realize it will most likely result in STD's or even HIV?

You could condemn talking, breathing, contact sports, swimming in public pools, sharing public transportation, or shaking hands by the same principle.
Living organisms manage to survive and thrive despite infrequent pathogen infections. Nature says it’s worth the risk. G*d agrees with nature. Or rather, nature agrees with g*d.
If you truly believe that sex is lethal and you cannot understand how to manage uncertainty in your everyday life then you should just stay away from all sex. Problem solved.
Aha perhaps you are referring to homosexuals along with allegedly higher hiv rates in such groups. I cannot speak for others. I suppose one could raise similar concerns for tobacco smokers. My answer would be the same.
