As far as I know, it’s shelf-stable for years. I wouldn’t worry about it.
You want the same amount per pound of person that you would give per pound of horse. The little plunger is calibrated in 50 lb increments.
Usual size of the tube is 1500 lb of horse. Enough for 7.5 doses for a 200 lb person.
Most of the horse paste syringes I’ve seen have the expiration date on the end of the plunger. Some I bought last spring has an ex date of Jul 23.
It does have the consistency of car grease. Mine is advertised as being apple flavored. If that’s true, horses must have taste buds the are very different than mine :)

I used to buy the paste for my horses at TS. Recently I was informed that it’s now also available in a bottle in liquid form.
