It has to do with imprecise replication of DNA
My nursing teacher when I was in school explained it like this: Viruses are strands of DNA, they enter the mitochondria of our cells... mitochondria are the part of cells where DNA is replicated... when the virus gets into our mitochondria it says to the cell, “hey make more of me,” and our mitochondria starts replicating the virus DNA, that is what causes us to feel sick, this hijacking of our bodies mitochondria... As Owen points out, the replication can be imprecise and that is what causes variants..
