Berkeley CA did already ban gas stoves and ovens in new construction. Chefs are appalled. I think the next big thing will be these convection burner things that heat up the pot but not the surface of the stove. They are better than electric but still not as good as gas.
I think you mean induction burners. They are expensive and require special pots and pans that are completely flat on the bottom, no warping allowed. I’m not sold on them, but they probably are better than regular electric stove tops. The flat top electric are the WORST, because they cycle off and on. I will never use those again if I have any say so in the matter.
There’s nothing like cooking on natural gas stoves. I love the control I have when cooking. It doesn’t surprise me that California has banned them in new construction. Horrible!!
