At the minimum, losing Acosta forces Trump to nominate a new Labor Secretary, which gives Senate Democrats a new opportunity to use a confirmation hearing as a platform to bash Trump in the leadup to the 2020 elections.
A confirmation hearing would be held by the Senate Committee on Health, Education, and Labor. That committee is chaired by Lamar Alexander, and the Democrat Ranking Member is Patty Murray. Also on the committee is Bernie Sanders (Committee Minority Leader) and Elizabeth Warren.
You can be sure that Sanders and Warren would use the platform to disrupt and attack President Trump, as well as elevate their Presidential campaigns.
That's the danger of not seeing the further out implications of what the Democrats do. Getting Acosta tossed opens up a high profile platform for Democrats to bash the Trump administration, just like how they did with the Kavanaugh hearings just prior to the 2018 elections.

Acosta is not going anywhere IMHO. Trump will “investigate” the past plea bargain and clear him. I think Trump likes him and by all accounts he does his job well. Acosta came out and fought hard to protect himself so all signs to me point to him sticking around.
