The solution is simple. Next time the coffee shop calls the police because someone is holding them up, just tell them that you think a police presence might traumatize some of the patrons.

Agreed. Businesses who are openly publicly hostile to the police, cannot expect police to be there if they need law enforcement assistance.
Hate to break it to you, but you can’t expect police to be there even if you’re the top donor to the PBA.
Police aren’t there to protect you. They have absolutely no legal obligation to do so.
Imagine the trauma a police presence would cause the burglars after leaving a few dead bodies.
These owners have put a target on them and their customers.

The solution is simpler than that: just station some ICE officers outside.
I totally support the right of businesses to be able to choose who they wish to serve and who they do not. Freedom of association gives them this right.
However, in this case, it’s basically a public confession that they are harboring illegal aliens, which creates enough probable cause for further enforcement action.

What the police should is to fill the shop with policemen. Have them standing about and sitting at all the tables. Effect the business of the shop. What are the shop owners going to do? Call the police? HAHAHAHAHAHAHA.
