I thought it was appropriate to make shepherd’s pie for dinner last night. Today we’re joining friends at a restaurant. LOVE cooking duck. Not husband’s favorite dish though. Sigh. But now that you’ve got me thinking about it, perhaps I could do a whole second main course for him and a fruit stuffed duck for me. Lovely thought. Do enjoy. LOVE cooking duck.

We're using a recipe from Nigella Lawson that starts off by poking dozens of holes in the skin with a toothpick, cooking the duck in the oven on a rack over hot water so the duck is beautifully steamed as the fat drips away, then removing the water, raising the temperature and cooking it so the skin is crisp while the meat is tender. It comes out great but we don't like the sauce she pairs with it.
