Have you seen anything on why Mueller (specifically) was chosen? --
I have seen nothing about WHY, but I have seen stories that make me believe the decision was green lighted (or not red lighted) by Trump.
Rosenstein was in place, Comey had been fired, and the SC had not yet been named. Trump interviewed Mueller to head the FBI. I think the reason given for the interview was a pretext, and Trump had no intention of offering Mueller the job of head of FBI, a job he had had before.
I believe that Sessions and Rosenstein have given Trump a good education about how the system is supposed to work, who is responsible for what, and that Trump has a better understanding of these matters than he lets on. Trump may have been guided by sessions and Rosenstein as to what avenues of inquiry and promise he should pursue when interviewing Mueller.
Notice too, the recent criticism of SC is not against Mueller, personally. It is against the supposed fact (which I believe is total fiction, but hey, it is the fiction the press has converted to fact, so let's run with it), the supposed fact that SC was appointed because of the revelation made to the press by Comey, basically to stifle investigation into collusion. The criticism is that the reason is fruit of a poison tree, that but for Comey's illegal leak, there would be no SC. Take back the illegal leak, and SC should also be taken back.
I don't think that's a good argument, for many reasons. I describe it only to distinguish it from a personal attack on Mueller.
If I was to speculate "WHY," it would be that Trump believes the investigation will be tough/thorough, accurate, and fair. Trump's opponents will look foolish when they attack Mueller's conclusions.

SC, in this context, is Special Counsel - Mueller’s temporary assignment.
