Good luck to the 1% with overt Celiac disease:

"Celiac disease is a serious autoimmune disorder that can occur in genetically predisposed people where the ingestion of gluten leads to damage in the small intestine. It is estimated to affect 1 in 100 people worldwide. Two and one-half million Americans are undiagnosed and are at risk for long-term health complications.

This is nothing new, it has always been the rule that the elements must be wheat bread and grape wine. Very low gluten hosts may be used. If a communicant cannot tolerate even that, he can take communion under the species of wine.

I know 2 ladies who are severely afflicted with celiac disease. Currently they are at a parish that has gluten free hosts for those who need them. But if they go to another parish they can just consume the precious blood instead.

They can receive Holy Communion under the auspices of the consecrated wine. Not necessary to receive with a host. Either is a total receiving of Jesus Christ in the Holy Eucharist.

This is a mountain from a molehill.

Christ is fully present in both species. They are permitted to receive under the species of wine alone.

Thanks to transubstantiation, it shouldn't be a problem.

There are celiac sufferers I know of at our daily morning Mass. They receive for Communion the consecrated wine, the Blood if Christ, from the chalice only. There are alcoholics who receive the consecrated Host only.

Everyone is receiving, in fact, the whole Christ. It’s not a problem.

Drink the consecrated wine if you can’t receive the host.
