Probably caused by some kind of “healthy” food like raw veggies. This never happens with cake or cookies.

According to the article the bacteria is one that usually grows in cooked food that’s held warm, but not warm enough, for an extended period of time.

My guess is that the chafing dishes were too full or the time from kitchen to event was too long.
