What the #### does brine mean? :) Five gallon bucket with 2-3 gallons of warm water and 2-3 cups of kosher salt. When the salt is dissolved, put the turkey in and let it sit, covered in the brine for at least 3 hours. Some folks to it overnight with Liquid Smoke added or Maple extract added.
