Been there, saw that. the food is only a stage or two above any generic Mexican restaurant you can find anywhere in the states. The cliff diving is mildly entertaining, though.Denver does have quite a few people of the brown persuasion there, so the authentic food is hit or miss.
The Aquarium is much better, food-wise and show-wise.
I saw that episode of South Park - had no idea Casa Bonita was real.

I went to the one in Tulsa when it first opened. Lines out the door! Ten years later lines still out the door, waterfall, strolling musicians, watched the sopapilla maker work, like a well lit cave inside. Could easily get lost if there was a fire.
A few years later I noticed some of the foods were prepared from frozen products as they were still cold inside.
Last time I went it was a shadow of it’s former self. bland food, no sopapillas, a real dud. Haven’t been back in years.
But then, that was Tulsa.
We went there once because we saw it on South Park. The kids had fun finding the little South Park stuffed toys they put up high in places. They took pictures of them. The food was so terrible I complained to a manager about it and he said there was nothing he could do about it. Everyone going in, must purchase a meal.. It’s mandatory. It was neat to see it once, but we wouldn’t go back.
The food and margaritas are nothing special , but the kids love it .
In that neighborhood there is a good chance any gunfire you hear is NOT part of the show
