I would think that Mormons would find Glenn Beck’s pronouncement that Cruz is the “fulfillment of Mormon prophecy” to be offensive.

You have it all wrong. Your ancestors can choose to be Mormon or chose to stay whatever they were. They are only given the opportunity to choose because of the baptism.
Since you are still alive, there has been no baptism done for you, nor can you be sealed to anyone without your permission. Nor would you be allowed to be unless you chose to become a Mormon.
