Can they actually opt out of the law? Can anyone just opt out of any law they don’t agree with? I don’t get it.

If they can deny your 2nd amendment right, they can deny your first amendment right.

They aren't opting out of the law, they're following it to ban carry in their stores. Even though open carry just passed, there are provisions for businesses to legally ban open/concealed carriers from entering their locations, which is by posting the required signage, as per 30.06 or 30.07.
