This is an easy thing to deal with. If you are a cop and have been refused service because of your duty firearm, simply get out your phone, start recording and ask the hostess to restate the establishment’s policy.

Then ask for a manager, when the manager arrives, ask the manager if it is the policy of the establishment to discriminate against law enforcement who are on duty and in uniform.

I agree...something is missing from this, I think. I don’t doubt the waitress may have said that, but I can’t imagine the LEO leaving without speaking to the manager first to validate that is in fact the policy of the restaurant.
