I read somewhere that all the insects in the world outweighs all the mammals. There are that many.
They too produce methane and CO₂.
If we start to eat insects in bulk instead of meat, two things will happen in rapid succession:
1. The most popular insects will soon become threatened.
2. We will have to start farming insects in huge quantities to guarantee our food supply.
They too have to eat, we have to grow food for them, they have to be somewhere, they produce as much waste as the same weight of cows do now.
And they don't even make leather hides.
All of this can be done of course, but no environmental problems will be solved by it.
