How the hell do they know? They don’t!
Some hacker may be saving her emails on a cloud server somewhere just waiting for the right moment to release them.

The original server hard drive needs to be subpoenaed so it can be examined by forensic computer experts to determine what was deleted and when, and what can determined from the security log.
