Truthfully, I don’t think it matters.

Potatoes, in and of themselves, aren’t particularly healthy, but they aren’t a problem in moderation, for those whose insulin response isn’t messed up. (Of course, after 40 years of government dietary recommendations, that’s less than half of the population.)

But nothing, no matter how healthy it is, or how toxic it is, is going to be healthy after being deep fried in rancid vegetable oils. (And all vegetable oils are rancid before they go in the bottle. Of course, they run the oils through a deodorizing step, during processing, so you can’t smell the rancidity, but just because it doesn’t smell bad doesn’t mean it’s healthy.)
