Creationists do not ignore ‘evidence’ - they start from a different place — God exists, anything is possible in His plan — evolution/ Creation/ chance mutations — let’s see what the evidence reveals. Some Creationinsts are stricter than others.
Hard-core evolutionists who refuse to consider a Divine creation or Intelligent design start from a different premise — God does not exist, therefore the evidence must demonstrate the evolution of species by chance and environmental pressures.
Acquired traits are not inherited, and natural selection narrows the genome, and does not widen it, so per the genetics I studied, once the genes for gills are removed from a species’ genome, they cannot be reacquired. It is not logical that a the genome would allow a species to lose gills, grow lungs, lose lungs and grow gills. That simply doesn’t make sense. Maybe it does to you. Dunno.
I will ask you this: when the first fertile human ‘evolved’, with a genome different from its parents (different species) what did it mate with?
BTW, I am a physiologist by education (many years ago) and hold a great appreciation for the works of Dr. Francis Collins who risked his reputation to write a very readable book as a scientist making a case for faith in God. Dr. Collins has PhDs in physical, mathematical and natural science doctrines. He led the team that decoded the human genome. For him, based on that work, there is little doubt in his empirical mind, that God exists, He guided His creation, and He put information in all genomes via DNA. Collins does a good job casting doubt on the ‘science’ and modern theory of evolution by the way, and encourages natural and physical scientists to lose their faith in modern theories of evolution and its mechanisms.
Should you care to read it, search for The Language of God by Dr. Collins. Easy read for a scientist; a bit tough for the general public.

All offspring have different genes from their parents. In history there has not been one child with the same genome as its parents. Genomes don't change overnight. They evolve over time.
That’s a good point. Even moreso is how inorganic raw elements can become the complex molecular structure of living organisms. It’s an absurd stretch. Incredibly improbable. I came up with a better understanding of this through organic chemistry, a topic I believe that you are quite familiar with. Even in Organic Chemistry, you don’t just expect complex organic molecules to form. Instead, you run a strictly controlled procedure to form the substance. Given what it takes to form polymers, it would take a whole lot more to form living organisms, even basic ones, from the elements or simple compounds. Expecting spontaneous formation, gets even more crazy.
