If I was the owners of these establishments, I would thank the protesters for letting me know just how unhappy they were to work for me and I would promptly fire them. That way they would be free to go and pursue a job that paid what they thought they deserved.
By doing this, I would be making room to employ those that are grateful to have a job.
Bingo, but fire them to the crowd of protesters, and immediately offer their jobs to some protesters who would take the jobs!!
