Does anyone know of a legitimate Coptic Christian relief fund for Syria, Egypt or Iraq?

I suspect that we’re the answer to prayers for them, particularly as they become refugees. I’d like to do more.

My parish priest has contact with some nuns from Malta, who are in Syria.

It's pretty bad there right now. A number of churches have been burnt down, but at least before they burnt them down they let the nuns leave.
