Almost all “back of the house” people in restaurants are now Mexican or Central American, whether it’s Subway, McDonalds on up to Ruth’s Chris, gourmet 5 star or whatever. Been that way for at least 20 years now. If you’re going to boycott restaurants due to that, you’ll be eating a lot of home-cooked meals.

And if you could see the back of the house in most these places, that’s exactly what you’d be doing.

And we do eat most of our meals at home.

Chick-filet-A at the end of our street hires a lot of great high school students who work in the afternoons and evenings and older people who work during the day. Have yet to see a Mexican among them. Our local Poppa John’s has no Mexican employees, the local Carl’s Jr. and the DQ seem to hire only Blacks. That still leaves us with a lot of choices in addition to food from Grandma’s kitchen.

Same with Chinese restaurants especially the buffets and large Chinese restaurants. There are a lot of skilled Guatemalan chop suey slingers. I read about a Guatemalan guy who is a very good Thai cook in a Thai restaurant
