Carbon burns. Aluminium melts. Reality is complex and hard. Then why is carbon what's left over when I have a camp-fire?

Charcoal is mostly carbon. I suggest an experiment tomorrow, if you have time, to see if charcoal burns.
Carbon Dioxide is carbon burned.

Then why is carbon what's left over when I have a camp-fire? Because your fire wasn't well. Charcoal is unburnt wood. Ash from a good fire won't contain carbon. Burnt carbon is CO2 or carbon dioxide.
