I'm right with you on every bit of that.
The green pans on TV are ceramic. As far as the ceramics are concerned, it all comes down to what's in the glaze, and can it come back out at cooking temperatures. It's probably fired to red-hot temperatures in the kiln, so it probably is stable at lower temperatures...that's the real question.
I was reading about glazes utilizing such things as Milk of Magnesia and Zinc Oxide (that white paste for your sunburned nose) not real scary sounding stuff.
Ceramics in cooking goes all the way back to the stone-age, but more recently, everyone and his dog has been preparing their meals in "crock pots" with no controversy.
