In places like Venice where horsemeat is fairly common, what kind of horse is used? Does it matter?

Friend of mine ate a horseburger in the Netherlands. Said it was delicious.

She also picked up the practice of putting mayo on fries. Way better than ketchup.

A horse is a horse, of course of course,
And nothing tastes a horse of course,
That is of course unless the horse

Go right to the source and ask the horse;
He'll give you the answer that you'll endorse.
He always serves as the main course --

I have eaten horse meat, and it is quite good: much better than elephant-burgers, which are somewhat dry and tasteless.

this would be funny. If the horsemeat is from Poland, then this is pretty sad for the horses. The folks in the countryside in Poland can be quite poor and horses are livestock and some seem to (ok, to my city-slicker eyes) cruel.

Though I am puzzled about the meat coming from Poland -- Poland doesn't raise a lot of cows and beef is not a popular meat over here -- most of the meat at the supermarkets are pork, pork, pork! And chicken and turkey, but that's about it.
