Tobasco was my favorite for many years. Then a few years ago I read somewhere that it was too vinegary for some people. After that, all I could taste was the vinegar. So I moved on to Tapatio (still my wife's favorite) and, for Mexican food, Bufalo and El Yucateco Red (the hotter, the better). El Yucateco (some people call it YUCK-ateco, which I'll never understand) is definitely my favorite now for Mexican food, followed by Bufalo in close second.

Sriracha is beloved by many for Asian food -- and for lots of other things, too. I like it, too, but far and away, my favorite Asian hot sauce nowadays is Sambal Oelek ground "fresh" chili paste. Hot, yes, but full of fantastic flavors as well and available in most supermarkets here on the left coast.

Then there's the million billion trillion Scoville stuff. Nuts if you ask me. Wouldn't touch it with a ten foot pole. Scares me. Drather handle rattlesnakes.

Ever seen this poster?

Might be fun to track down all of them and give them a go, as long as they don't fall into that insanely hot category I mentioned earlier!

Old Country Buffet (Ryans) has a good 20 or so different sauces these days.

Bufalo Chipotle is good stuff.
I have trouble finding it though.

Rub down some pork chops with that and them zest some lime on them and grill em. salt and pepper to taste.

That's my simple recipe for Yucatan Poke Chops
