True that. Southerners, of which I am a part of, have always had an affinity for the pig. Bacon fat is sacrosanct in many a southern woman’s kitchen. Those who think the pig is heretical to them are really missing out. Pulled pork barbecue, ribs, bacon and bacon seasoning in other dishes. Can’t you just smell the bacon???
