While I believe he has flipped the bird several times, this is actually just a semi-famous photoshop. Somebody removed a finger so it looks like his middle finger is the only finger that's up, but you can see that it's altered, they didn't do a very good job. The original is easy to find.

It's telling that this is believable though. I even thought for a few seconds that it was real the first time I saw it until I took a closer look.
