- New York City officials report that only 20 people signed up for a free seminar on complying with the upcoming ban on trans fats in restaurants.
Half of those who did work for the city, the New York Post reported. At most only 10 people from the city's thousands of restaurants have responded even though 33,000 invitations were mailed.
"This is the first time we are doing this. It may be people don't want or need this kind of assistance," said Sarah Markt of the Department of Health and Mental Hygiene.
The ban takes effect July 1. Trans fats, vegetable oils hydrogenated to be solid at room temperature, have been linked to heart attacks and strokes.
Restaurants have a three-month grace period when they will not be fined for trans fats. They also can continue to use them for deep-fat frying of doughnuts and similar cakes until next year.
Many restaurateurs say they got rid of trans fats months ago, responding to demand from health-conscious diners.
The city plans to keep on with its seminars, including some aimed at restaurants serving ethnic cuisine.

I use crisco in something I make. I bought the new no trans fat crisco that is supposed to be just the same.
It isn’t. It sucks. Give me back my old crisco.

Use lard. Get it un-rendered from your butcher. There is nothing so nice. Mmmmmmmmmmmm. Best crust. Perfect for deep frying. Mmmmmmmmmmm.
I don’t know. I called them and spent a long time on the phone with their help person. She took down my recipe and lots of notes on my reaction. Said it would go to their test kitchen. I asked them to pretty please give me an option... new or old.
Then I went to Costco and loaded up on 6 pound cans of old crisco. I walked out with 8 cans for me and 6 for my friend.

I would love to use lard for crusts. I never have, but I think I may give it a try. I don’t ever deep fry. I figure I can go to a restaurant where they have the nice equipment to do it right if I need something like that.
Unfortunately it won’t work in icing.
People don’t want or need this assistance........I am not a cook in any way, but how hard it is to cook with a different type of oil? What am I missing?
