Coulda' been. I was born and raised in Chicago, and an earlier relative married and then moved to Milwaukee (where the husband's family was from). German Prussians on both sides. I then grew up in Wisconsin where my Aunt/Uncle had a home, (and we moved to later) and then lived in Kenosha County for years. Now we're in North Central Illinois.

Christmas/New Year feasts were mostly centered in the kitchen where the food was. The family gravitated from there. I only mentioned a part of the recipes that I recall from my childhood.

Mmmmmmm. Pass me your foie gras if you're not "using" it...

Seriously, it's one of the richest foods you can eat, and is delectable if cooked and seasoned to perfection.

Eat slowly and in small bites. Doesn't require chewing. I prefer it as an appetizer, perhaps with a ruby Port, but to each their own!

Give it a shot, at least once. You might be surprised.

My Dad later worked in Racine and used to bring home Lehman's Kringle Danish. Oh, boy. Our local supermarket recently had it for awhile but then dropped it for whatever reason. What a disappointment.

Before that, when I was a kid and staying in Wisconsin over the summer, we had a bakery truck stop once a week with bakery goods. Always good bread, rolls and other baked goods. I used to love the aromas.

Wisconsin fish fries at that time were fried Perch with potato pancakes. We'd go every Friday night to a local pub and have them. They don't do it like that anymore (at least, here in Northern Illinois).

Buy some liverwurst, mix in some onion and a little mayonnaise, maybe a little garlic (but not too much of each added ingredient). You've got Faux Foie Gras.

Hell, that sounds a lot like "Fancy Feast" cat food. And I do enjoy liver flavored Fancy Feast on toast or crackers. Sometimes, when I'm in a pinch, I'll eat it right out of the can.

I was at a 4H fair this weekend. Every food stand had 'fried potatoes'. I shocked (and pleased) to see that since I'm a blue state denizen.

When foie gras is outlawed, only outlaws will have foie gras.

That is truer than you know. I remember when they were trying to cut down on caviar harvesting because the "good stuff" was almost gone forever.

All it did was spawn a black market that was more violent than drug trafficking.

August 3 [13:20 GMT] - Chicago Chefs protest foie gras ban(more) - The City of Chicago has banned the serving of foie gras, and a group of restaurant chefs calling themselves Chicago Chefs for Choice has been formed in protest.

One participant to a StarChef. Com forum , on the issue said this:

 “I'm a Chef/Owner in Chicago, I suppose this is akin to the 1920's prohibition (that didn't work out so well either) We have a city council that has apparently solved all of our civic, social and economic issues. I look forward to going to work and seeing no potholes and living with the knowledge that all of the cities schools are well funded and everyone has health coverage. Nice dream right? But not to sound overly biblical, and to paraphrase Joshua in the old testament, As for me and my house we will serve foie gras!!!”

Soft shell crabs are at the center of the latest controversy over how seafood and meat are being treated on their way to the table. From veal to foie gras, many delicacies with potential ethical issues are disappearing from some restaurants and supermarkets. Live seafood is next. Last week, Whole Foods Market stopped selling live soft shell crabs at the height of the season for the fully edible spring favorite. The Texas-based natural foods chain is reviewing its position on lobster and expects a decision by June 15.

Soft shell crabs are shipped and stored on ice or metal trays, often covered with seaweed and damp newspaper to keep them moist. They are forced to live up to a week out of water. Some die during shipping. The time in transit and discomfort of the trays concern Whole Foods, [a spokesperson] says. The Humane Society of the United States, which two years ago started a farm animal welfare campaign, is focusing on furry and feathered creatures. "Animals should not be boiled alive," said Paul Shapiro, director of the Humane Society of the group's Factory Farming Campaign. "At the same time, it's important to recognize that animals who are raised on factory farms, like most egg-laying hens or veal calves or ducks used for foie gras, suffer from a lifetime of torment."

I suppose it's a distinction without any merit, but liver doesn't exactly fit in your list.

Have you ever eaten calves liver or chicken liver?


No. Well, I've tried calf's liver (was basically tricked into trying it) and it was revolting. I'm sure the mere smell of it would be enough to make me vomit. It's forbidden in my house. I don't even allow the word to be spoken.

Naw. You've gotta try it. Anytime we go to a restaurant that has it I pig out. Especially if the serve it with Pumpernickel bread. MMMmmmmmm!

It won't hurt you, and you may find that you like it. And Liverwurst sandwiches with onion, and mayo are the best. (Well, besides PJB).
