Stupid PETA.

Everybody knows you have to put the sauce on just before the meat is finished, otherwise the sugars will burn.

My thoughts exactly. The sugars will carmelize and turn black. They probably think by putting the sauce on first it will keep the meat tender and juicy! ha! Everyone knows you have to inject the marinade for it to be tender.

Buncha losers.

Exactly. I would suggest a rub made of paprika, brown sugar, a dash of cayenne, crushed rock salt and black pepper. Smoke for about 8 hours between 200 - 225 degrees, nothing hotter. The meat should be falling off the bone, but not mushy--as any good bbq chef knows.

I'm thinking a mixture of apple and pecan, with just a touch of hickory for the fire.

Then, when its done--serve up a nice vinegar based sauce. Otherwise, the sauce carmelizes and you get those nasty black carbonized areas. Ick.

PETA are a bunch of dummies-- but what do you expect from a bunch of tofu eating morons?
