Punxsutawney Phil: 6 more weeks of winter

PITTSBURGH - Punxsutawney Phil saw his shadow, but it was hard to find a complainer in the crowd at Gobbler’s Knob, where the morning temperature was well above freezing and the Groundhog Day high was expected to hit 48 degrees.

There were a few boos at the groundhog’s prediction of six more weeks of winter, but most of the hundreds of revelers instead turned the event into an impromptu Pittsburgh Steelers rally.

Fans in football jerseys sang “Here we go Steelers,” and members of the Punxsutawney Groundhog Club’s Inner Circle — the top-hat- and tuxedo-wearing businessmen responsible for carrying on the groundhog tradition each year — threw black and gold Steelers “Terrible Towels” as they waited to rouse Phil from his burrow.

Groundhog Stew
Servings:Preparation Time:0.75 hours
Ingredients

1 groundhog
2 onions, sliced
1/2 cup celery, sliced
Flour
Vinegar and water
Salt and pepper
Cloves

Cooking Instructions Clean groundhog; remove glands; cut into serving pieces. Soak overnight in a solution of equal parts of water and vinegar with addition of one sliced onion and a little salt. Drain, wash, and wipe. Parboil 20 minutes, drain, and cover with fresh boiling water. Add one sliced onion, celery, a few cloves, and salt and pepper to taste. Cook until tender; thicken gravy with flour

Groundhog Cake
Yield: 1



Ingredients
1 groundhog
1 c quick or old-fashioned oats
1 1/2 c boiling water
1 bag semi-sweet chocolate
-morsels; (6-ounce)
1/2 c butter
3/4 c sugar
3/4 c packed brown sugar
2 eggs
1 1/2 c unsifted flour
1 ts salt
1 ts baking soda

Instructions

Puree 1 Groundhog (preferably named "Phil")
Pour boiling water into a large glass bowl containing pureed groundhog. Stir in the oats.
Placethe chocolate morsels over the top of the oatmeal -- do not stir! Let stand for 20 minutes until the oats are soft and the chocolate is melted.

In a large bowl, cream the butter and gradually beat in the sugars. beat in eggs, one at a time. Add more Phil. Add the oats and melted chocolate, mixing well. Add the flour, salt and baking soda. Mix thoroughly.
Transfer the batter to a greased and floured baking pan (13 by 9 by 2-inches).
Bake in a 350 degree oven for 40 minutes, or until the cake starts to leave the sides of the pan and springs back at the touch of a finger. Cool 10 minutes in pan, shake loose, and turn out on rack to cool completely. Frost and decorate if desired.

Phil is screwed up. My daffodils are coming up and there are buds on my azaleas. It's spring here in Michigan. Even the stupid birds are back. Just wait til March. LOL.

I used to have a "Road Kill Chili" recipe for whistle pig....all washed down with a good Woodchuck Cider. I've long since put down roots in Louisiana, but have yet to try it on nutria rats...
