Borderline leaning toward type 2. yeah—type in Parish Rice online and one can find the grower and buy direct. A 2 lb bag fro amazon is $14. I did that to see if I liked the rice. I did and went ahead and purchased the 25 lb bag.
panang curry comes in a small “tuna” sized can at your asian market. I use Maesri brand. On Amazon its expensive. I pay around $1.60 a can Coconut Milk. Use the one that has the least amount of ingredients.
Holy Basil is different from Thai Basil and regular Basil. Closer to Italian Basil if you can’t find Holy Basil. But in the end any basil could work. Or leave it out...its not the end of the world. Coriander is easy to find.. I used that in this batch.
Holy Basil is good to use when making pad kra po—so is using the ground turkey.
If the gentleman has tyep 2 chances are he may also have non alcoholic fatty liver with its associated problems. Ground Turkey works well then as a protein and limiting red meat intake. I don’t advocate ditching red meat, but if one needs meat most days, then the turkey will be a good addition.
I have been experimenting making Kidney Bean Curries (Indian) Made some last night using pinto beans. Essentially a kind of chile. I used thai chilies and Khasmir Chile Powder.
Why do I limit Red Meat? Its simple—gout. So I watch all meat intake—but that’s me—after years of eating pork and beef...in the end it was Salami that killed me...

Eating just meat will get rid of gout, I used to have it. Now carnivore and gout free.
