NATIONAL QUESADILLA DAY (Dia de la Quesadilla) | SEPTEMBER 25
National Quesadilla Day on September 25th encourages us to pull a chair up to the table and eat some authentic Mexican food. While it’s not a sandwich or a taco, the quesadilla satisfies snack cravings while also completing a meal.

Typically made with a corn tortilla and filled with cheese, we heat quesadillas until the cheese melts. Then it hits the grill or frier until just crispy. Some people also include other fillings such as cooked sausage, chicken, pork, or beef. And don’t forget the toppings. Fresh tomatoes, salsa, herbs, sour cream, guacamole, or chilies bring a whole other level of flavor to the quesadilla. Don’t forget to finish it with a squeeze of lime. Serve it with an ice-cold beer or a margarita, and the meal is complete.
Families love quesadillas, too! In households around the country, families include quesadillas as a popular mealtime solution. In fact, V&V Supremo recently found one in three people are making quesadillas at least once a week*. Who writes this stuff? It’s flour tortilla and the photo accompanying the article is of flour quesadillas.
I had the same thought. Corn? Um…. No!

We’re talking about food here, you know that right?
The quesadilla was invented in Mexico, possibly in the 16th century or before. The ingredients and method evolved over time, but an authentic Mexican quesadilla today is typically made with corn tortillas and Oaxaca cheese. The American quesadilla is a variant on the Mexican original: it’s more like a grilled cheese and typically uses flour tortillas.
Here are 3 tips to a next-level quesadilla recipe:
Use quality melting cheese. The best types of cheese for the American quesadilla include mild cheddar, Colby Jack, and Mexican blend cheeses. Avoid sharp cheddar because it doesn’t melt as well. For a more traditional Mexican quesadilla, use Oaxaca or Chihuahua cheese. Fill with a sprinkle of pico de gallo. Pico de gallo, or fresh salsa, adds just the right kick to the interior. It adds a little tomato, onion, garlic and jalapeno, but not so much that you can distinguish any of the specific flavors.
Cook in cast iron or stainless steel. This gets the best browning to the outside of the tortilla. We like to use a small drizzle of oil for cooking, but you can also cook with a dry pan. Cook 1 to 2 minutes per side until golden brown on the outside.
Whole wheat tortillas
Grilled chicken (omit for a vegetarian dish)
Shredded Monterey Jack and/or sharp cheddar cheese(s)
Guacamole
Hot salsa (and/or fresh tomatoes diced)
Diced red onions
Diced red bell peppers
Refried beans
Finely chopped jalapenos
Season to you heart's content - fresh basil leaves, rosemary,
cumin, black pepper, garlic, thyme, cilantro, paprika, etc....
And Bacon is a definite option here.
As are sliced black olives, scallions/green onions, perhaps even mushrooms, etc...
