It's hot out and cooking a heavy meal is kind of 'out'. I've done the going out to dine a few times but really home cooked meals often and mostly to me are the best, however I've run out of dinner ideas.
Freepers out there have any of you some nice summer recipes you'd like to share?
1 pkg chicken ramen noodles w/ seasoning packet
1/4 cup sliced almonds
1 Tbsp butter
4-6 slices bacon, cooked and chopped
Salad greens
1/2 cup olive/vegetable/canola oil
1/3 cup balsamic vinegar
1/4-1/2 cup sugar or sugar substitute
1 packet of ramen noodle seasoning
Break up ramen noodles into smaller pieces. Melt butter in a small skillet. Add noodles and almonds, stir frequently until lightly toasted. Set aside.
In a small bowl, whisk or blend the oil, vinegar, sugar and seasoning packet.
Place salad greens in a bowl. Add noodles, almonds and bacon. Toss with dressing mixture (or serve it on the side).
Anything outside on the grill keeps the kitchen cooler.
Last night we grilled some salmon that had dehydrated lemon flavor sprinkled on, then drizzle with olive oil. Generously sprinkle on dill and herbs de Provence. Grill until cooked.
We served with rice and green beans almondine.
For the green beans, I parboil in water in the microwave until desired tenderness. I drain the beans in a colander, add some ice to cool it off and set it aside. I used sliced or slivered almonds, heat them without butter or oil to brown or toast them slightly. Turn off the pan, add a tablespoon of butter/olive oil and pressed garlic. When the butter has melted turn the pan back on to medium high, and sauté the beans with the garlic and almonds for just a few minutes, till they are warmed and coated. Total cooking time including the microwaving the beans is about 17-20 minutes depending on portion size and how soft you like your beans. Add salt and pepper to taste.
Easy, simple, healthy dinner, not to mention amazingly delicious. We have houseguests right now, and were awarded rave reviews on dinner last night.

My apologies — my ramen noodle salad also has cooked, chopped chicken! Can’t believe I forget that part! About 1/2 lb or so is good for a 2-3 person salad. It’s a great recipe, my daughters would beg me to make it during the summer!
Buy a Traeger grill and any flavor pellets. It really makes any meat taste better than charcoal or gas grilling. Shameless plug but I am really surprised myself.

Quinoa salad. Cook quinoa and add avocado, fresh mint, garlic, tomato, cucumber, lemon juice, and olive oil.
Frozen pizza. Don’t bake it. Just lick it like savory ice cream. 😋

They are best when left at least overnight in the refrigerator.
Actually that is close to what i have out for tonight.
If the afternoon temperatures will be unbearable for grilling outside, consider grilling things in the early morning that you can refrigerate and serve at dinner time.
If you work from home, like I do, go to bed early and enjoy the coolness of the pre-dawn mornings. Or take a nap in the afternoon and venture out when it cools.

fine on it’s own but becomes extra special with sliced sweet potato, yuca, corn nuts and purple olives. And don’t forget to slurp the juices off the plate!

Tuna fish salad, served chilled, with sharp aged cheese and crackers. Make the tuna fish salad with only a little mayo, but adding in chopped celery and radish. Iced sweet tea to drink.

Cilantro Lime Serrano Chicken Fajitas
1.5 lbs boneless Chicken of preference
2 tsp Chili Powder
2 tsp Ground Cumin
2 tsp Dried Oregano
1 tsp Smoked Paprika
1⁄2 tsp Cayenne
11⁄2 tsp Salt
1⁄2 tsp Ground Pepper
1 Red Onion
1 Red Bell Pepper
1 Orange Bell Pepper
1 Yellow Bell Pepper
5x Garlic cloves, fresh/minced
3 Tbsp Olive oil
6x Serrano peppers
1 Cup Cilantro (or the upper head of a bunch) 2 Tbsp Lime Juice
Prep:
Add all measured seasonings to a small bowl, mix well and set aside.
Slice bell peppers; set aside in a bowl of its own.
Slice onion for slices or wedges as preferred; set aside in a bowl of its own.
Coarsely chop cilantro; set aside in a bowl of its own.
Coarsely chop serrano peppers; set aside in a bowl of its own.
Mince or crush and chop garlic; set aside in a bowl of its own.
In large frying pan, heat oil over medium heat and cook sliced chicken with 1/3 seasoning mixture until half cooked, about 5-8 minutes. Add onion with another 1/3 seasoning and finish cooking chicken through. Add garlic & serrano, cook about another 5 minutes. Increase heat to med-high, add bell peppers with remaining seasoning and cook until crisp/tender, about 5 minutes. Reduce heat to medium, add cilantro and lime juice, stir in over medium heat for just 2 minutes and remove from heat.
Serve with flour tortillas, optional sour cream and/or guac.
Make potato salad in the morning
(Boiled potato slices, chopped green onion, mayo) and refrigerate.
Add a protein such as hard cooked egg, sliced lunch meat, cubed ham or salami, cubed cheddar, or bacon bits when ready to eat. Filling, complete, inexpensive, delicious)
