I don't think that's necessarily true. Lots of the service people who take good care of us every day are probably lower income. But sometimes they work long hours or more than one job, and cooking from scratch takes time. Making a whole-grain bread is a LOT cheaper than buying one in a fancy health-food store. So is scouting out an ethnic store for cheaper fish and fresh veggies, than buying them at the mega mart. But those things take time and access.
