I’ll tell my husband that. He eats a lot of steak, and usually does it in cast-iron on the stove top. (I think he starts with a REALLY hot pan.)

You’re husband’s right. Hit the steak with as much heat as possible, fast. Not enough time for anything to boil.

Here’s a good way… heat from the top.
