I used to “flash” different operating systems IE-Cyanogenmod) on an Android phone. However, I had to sideload apps and they didn’t work properly without a Google account. Also, I assume they work with “Carplay/Android auto”?
It’s been so long I have no idea what ROMs are out there now.

It’s why I have never added apps, websites, etc that have any financial information - i.e. Amazon and the “Swipe & Pay” apps are just begging for a hack.

I would suggest watching a few online videos as well. For me personally,(not a suggestion) I have gotten cheap/high compatibility/older phones off of Ebay first, and used those as testers to see the process myself and get used to it.

I got no Google. My coworker did it for me. It loads as Slim6.
Not sure how he did it, but it works great.

Lineage and Graphene are the only two I would trust at the moment.
Total security is a myth, especially depending on how much of a pain in the ass to the government you are.

Not everyone can do that is the problem. I went to try that myself a couple times but was afraid I would brick a perfectly fine phone. It is easy to do. And some just cannot be rooted at all without bricking it. Serious homework and direct advice is required to make this happen correctly.

I totally agree on the myth part. But we can achieve total security against Microsoft, Apple, Google, and many others at least.
That’s not a myth. Getting off of their platforms is very doable and has real-world tangible results.

I buy burn phones and never add a Google account or carrier account. And only use calling, text, contacts, camera, Data, and file manager. No others, And these few are usually default from the phone manufacturer and not from the carrier or Goggle. So even though it is android, it is unhooked from Google services.
