Knight had the fish preserved via taxidermy and is renting it to a friend who is going to hang it up at his restaurant for two years.

His friend must be paying for the mounting of the fish.

You no longer have to kill a fish to get a mount. You just take a few measurements and photos and send them to Gray's Taxidermy in S. Florida. You'll get a fiberglass reproduction that lasts forever while releasing the fish to continue on.

The carcasses of record fish do need to be turned in to be made official. There are however, a ton of anecdotes (with photos) here in FL where captains have released potential record fishes to help maintain the fishery.
