The American diet is based on traditional practice. Our calorie intake is based on expected output of physical activity.
If you eat Like a lumberjack and work like a lumberjack... You will be fit. If you eat like lumberjac and sit on your ass all day... You will be unfit.

Not really. How the body processes different foods involves different pathways. A high carb diet DOES work for a high energy lifestyle but it optimizes for processing sugars. A different path is needed to optimize burning stored fat.
Not a problem for someone who starts out fits and works very hard their entire life. A big problem if someone has become fat and now needs to lose it.
A body optimized for processing simple carbs will CRAVE those carbs. Frequently.
A body optimized for processing fat will relax because most people have stored fat - so the body knows it is in no danger. When you get used to burning fat, you feel an emptiness in your tummy and it is no big deal. When you are optimized for burning carbs, you get cravings long before you become hungry.
I don’t do a true keto diet. I’m just not that worried about some carbs. I use intermittent fasting to get my body used to burning fat, avoid simple carbs like sugar and flour, look for ways to add some saturated fat to my diet...and I’ve lost 35 lbs and dropped my unmedicated blood pressure from 155/100 to 130/80. Pulse remains around 60.
Hope to lose another 10-15 lbs. And yeah, I regularly feel hunger. Beats the heck out of cravings for sweets!
YOU CANNOT FEED A CARB DIET TO CATTLE FOR PUTTING ON WEIGHT FAST, AND TELL PEOPLE TO EAT THE SAME CARB DIET AND THAT IT WILL KEEP THEM LEAN.
