Eggs are a great filler with a lot of protein. Fried egg sandwiches, egg salad, poached on toast, French Toast, eggs stirred into chicken soup, eggs benedict. It’s versatile.

My sister has eaten two eggs a day for breakfast for over 10 years. Her blood work is outstanding. Her doctor decided her bloodwork was proof her bad eating wasn’t really so bad.
I eat about 6 eggs a week. Maybe more. My blood work is fine. And I notice the “evidence” doesn’t include anything as simple as “We fed 1,000 people 3 eggs a day for 2 years and the cholesterol went thru the roof”. If eggs really ARE bad for you, the test would be child’s play. But instead, we hear, “Eating eggs is correlated to....”
I’ll take eggs over simple carbs any time.
Again, a person with high cholesterol might have a low cholesterol diet but suffer from familial hypercholesterolemia.
But with a diet like yours, you should be monitoring your cholesterol levels. If those are still within normal ranges, that's good.
