Because this is when WE recognized ourselves as independent instead of when others decided to recognize us...which would have been the French first I suppose.
Independence requires no one else to recognize us - we made the call as our God Given Right so that is the date that is important.
Because it was an African country that first recognized the US. And since we are racist... (Sarcasm)
