Interesting, but not terribly meaningful without percentages. For example, Somali has transformed Minnesota, particularly the Twin Cities, and mostly for the worst. But I'm not aware that Chinese is widely spoken in Utah, anywhere.
Pennsylvania Dutch is widespread here in the Amish and Mennonite communities, but virtually all of them speak English as well.

Same for New York. I’m sure if you took New York City out of the picture, the #2 language in NY State would not be Chinese. I’m sure the big cities skew lots of states. Oregon and Washington come to mind, too.

That was my experience living in Pennsylvania as well.
Except when one wanted to pretend he/she didn’t speak English.
