Monthly Cooking Thread - Easter Update

I was saying to my husband that I wanted to post a thread for Easter, but didn't know what to post. He said, "A rabbit recipe!" My husband's father raised rabbits, and the family grew up eating them.

I said that I didn't think that would be exactly appropriate to the season; and Husband said, "It'll be funny!"

So, here's a compromise: a pretty Bunny Cake - I think Liz has posted this or something very like it before - and from Epicurious, 'Rabbit Cacciatore' from Ischia in Italy. (If you're like me and averse to eating actual Bunny, Chicken Cacciatore is wonderful):

The Husband Unit just opined that when people say of unusual meats that they ‘taste just like chicken’ they’re almost always wrong - things taste like themselves. But he says that rabbit is actually something about which you can say that.

(I must differ - I once had frog legs in a paella; I didn’t know what I was eating and was sure that it was chicken.)

My Mom’s parent’s were Eastern European. They loved lamb and garlic. My Grandfather had a lamb roasting pit in his garage. I would help him baste the lamb with garlic and oil when I was a kid. Heaven.

Growing up in Chicago, when I was a kid in the summer we went to Greek picnics for lamb on Sundays. I thought that was every family in America did on Sundays after church until I got to grade school.

For awhile in college I dated the guy next door and he introduced me to the garlic press.

We started cooking together and using a lot (a ton) of garlic. Now I always thought my grandparents smelt funny cuz they were old. When he and I started to smell like my Grands I realized it was garlic!!!!

It was soo worth it!!

One time when the kids were little I made a bunny shaped meatloaf on Easter.

That was fun.

Nobody thought I’d really do that.

Grew up on Lenten’s Fridays with Mrs. Paul’s frog legs. Dipped in butter and lemon... HEAVEN.

But not exactly healthy.

But soooo good, who cares!!!!

1 shot Godiva Dark Chocolate Liqueur
1 shot Salted Caramel Vodka
A splash of half and half

We had rabbit one or two times when I was young & if I hadn’t known it was rabbit I would have thought it was chicken. Adorable cake. I bought frosted carrot & bunny cookies at my favorite bakery today.

Someone brought Hot Cross Buns to work today - I love those, my Grandmother always had them at Easter.

I’ve never made them - I’m lazy when it comes to yeast-raised things; but I must try.

I never saw those frog legs; I don’t think they make them anymore (?)

But Mrs. Paul’s is my favorite of the breaded fish out of the grocery freezer.
