Ah so... In those days, they didn't have refrigeration. Preservation was often accomplished by salting. I guess I should've said I never add salt to any fish I eat because it always seems to make it too salty for me.

The McDonald's of their day? Wouldn't fly today, though. Wonder what kind of salty fish they were serving? I never put salt on my fish. Always seems to ruin it, no matter how little I add.

Dried salt cod (and other types of fish) have been on the menu for thousands of years and are still widely consumed today, particularly in Southern Italy, Portugal, Spain, Scandinavia, Scotland, Iceland, Canada, and ethnic neighborhoods in the USA.

A few years ago I saw a show about ancient Roman life describing multistory apartment bulidings, and “take away” restaurants with a surviving recipe that sounded similar to a hamburger. The host explained how taxis had a meter than was driven off the axle, and allowed a ball to drop with every revolution (probably geared down so it wasn’t every turn of the axle). At the end of the trip the driver counted the balls to calculate the fare.

With that menu there isn’t much for salmonella to live on other than lentils which would have been boiled I am guessing.
