The "say" that belongs to the Mormons? Hello?

Bags, don’t argue with your fiancee.

In your “Mormon’s say”, the word “say” is not a noun, and there is no reason to use the possessive form of “Mormon”.
The word “say” is a verb and its subject is “Mormons”.

Mormons are performing the action of saying something.

Think of this sentence: The FR women love bagster.

The women are performing the action of loving. No possessive form is needed. (But blu becomes a little possessive when the other FR chicks are after you.)
