Galas are kind of bland. I like Cortland for eating. Cortlands cook up pretty good, but for cooking there’s the old Jonathan that I like best.

Cortlands,macs,pippins,grannies...all far superior to that dull cardboard tasting red delicious..
Wasn't used to Cortlands but Jonathan has always been my fav for eating and cooking. Evidently it doesn't ship or keep well either.
A local orchard will have some Jonathans this fall but they soon sell out in the only store that temporarily offers them.
My parents in going to the local orchard became fond of Northern Spy which my mother loved for baking large whole apples (these were green but there is a New England Red Spy).
I was watching a Russian video last night about their version of "easy apple pie". This one looks like the best. A secondary point here is that many cooks use a combination of apples in their recipes.

One of my least liked ones is Red Delicious, too bland imo. I do often use Grsnny Smith for cooking only.

After watching was looking for heirloom Russian seeds and apples. Some interesting tomatoes at seed savers exchange in Decorah Iowa. Also a gorgeous sunflower, poppy, pickling cucumbers, watermelon, other things. Growers in CA specialize in Russian and other apples, etc.
