Isidore Verheyden - 'Afternoon Tea'

I’ve always been attracted to the various forms of traditional English Tea Time, and found that Chef John of ‘Food Wishes' has done a video on making clotted cream at home. His method is very easy, and just involves heating the cream in the oven at low temperature for many hours, cooling, chilling, and then skimming off the solids that rise to the top. I’m sure it’s not as good as the authentic product enjoyed in Devon or Cornwall, but it looks pretty good.

This is very simple, but takes many hours over several phases, so you will want to start a couple of days ahead if you’re planning for guests; and my choice would be to have it with Black Raspberry Jam on scones :-)

For a savory afternoon tea, you might want to try Coronation Chicken, a curried dish originally created as a salad dish for the coronation of Queen Elizabeth II; but it makes a very nice tea sandwich filling, and there are many versions of it. Here’s one from the BBC and the ‘Hairy Bikers’:

I love that channel. I’ve wanted to make the creme fraise, but it’s hard to find the unpasteurized cream. You have to get organic, and even then it’s ultra pasteurized any more.

I guess around here if I wanted unpasteurized anything, I’d make friends with a dairy farmer. Are there many Amish in Michigan?

Thanks for the link! This looks interesting! I enjoyed watching the Two Fat Ladies, but since Clarissa died, they don’t seem to run any reruns, which is a shame.

I actually like the savory ones - a little meal with lots of different tiny bites, to tide one over until the late dinner. It was probably a lot healthier than what we now call ‘Happy Hour’.

But the clotted cream and jam look very nice for a mid-morning pick-me-up.

(Assuming, of course, that one limits one’s indulgence all around ;-)

A nice change for enjoying that afternoon cup of tea when friends drop in.

Apple Cinnamon Tea--4-6 Servings

METHOD Steep 4 min: 5 tea loose tea, 2 c boiling water, broken cinnamon/stick.
Add in/stir to dissolve 3 tbl br/sugar. Add 2 cups warm apple cider.

Strain into pretty tea cups and serve.

This Swedish Creme might be nice on a tea table served with berries.

Swedish Creme

METHOD Heat/stir/dissolve in bain 2 c h/cream, cup sugar, 1 1/2 tea cornstarch;
before bain water comes to a boil, set pan on counter; cool.

Beat in 2 c sour cream, tsp vanilla; chill.

SERVE over raspberries, blueberries or strawberries---simple, and delicious.

I would like to try the clotted cream on its own or over berries. And I am saving the coronation chicken salad recipe. Hairy bikers, so funny. I feel like they should wear hair and beard nets when they cook! Saving their site which looks filled with ideas.

I wish you did weeklies again. I know it’s so much work but it was so fun.

In CA you can get Organic Pastures raw cream. It’s pricy. I made ice cream with it (combining with raw milk to cheapen it up slightly). It’s delicious. My daughter can’t digest pasteurized milk and ice cream (neither can I but I don’t try) so I wanted to try raw ice cream. It’s not really raw any more if you make the custard.
